Warm Spinach Salad

This basic recipe of spinach with pasta, onions and mushrooms is a special treat when accompanied by a lobster tail! Serves 3-4

spinach leaves, raw - 1 large handful per serving
cooked rice spaghetti pasta (or pasta of choice)
1 yellow onion, chopped
1/2 pound portabello mushrooms
1 T Parmesan cheese, grated per serving
black pepper
seasonings to taste
lobster tail, chicken, tofu, or any other protein you might like (or none at all!)

A salad of pasta, onions, and mushrooms on top of spinach leaves and topped with a lobster tail. This salad is being served on a gray handmade plate with black edging.

​Heat the coconut oil and sauté the onions and mushrooms. If you're a garlic lover, add that in too!  Cook the pasta per package directions. If your lobster tail is uncooked, I like to sauté it, but if it's in the shell you can give it a quick boil.

To Plate
Layer the spinach first, then the pasta, followed by the grated parmesan cheese, onions and mushrooms. Top with black pepper. Add the lobster tail and enjoy this special meal!
