Sauteed Red Cabbage & Apples

If you're not familiar with garam masala, I strongly recommend you give it a try. Its flavor is sweet, spicy, and deep and for this dish, it brings out a flavor in the cabbage that you don't want to miss!
1 small - medium head red cabbage
1 apple
1 yellow onions, chopped
1 - 2T coconut oil
1/4 t garam masala, optional

Place the chopped onion into a large frying pan with coconut oil and allow the onion to cook for a few minutes.

Cut the cabbage into quarters, core, slice into thin strips, and then chop into random 3-4 inch pieces.

Peel, core and cut the apple into chunks.

Add the cabbage and the apples to the onions and cook on low heat for approximately 30 minutes. The cabbage can be eaten within 10 or 15 minutes if you prefer it a bit crunchier.

Season with salt, pepper, and the garam masala if you enjoy that spice. I find the garam masala brings out a depth to the dish that is lovely.

SERVING SUGGESTION: This cabbage dish makes a wonderful breakfast. Place the cooked cabbage in a small frying pan. There is no need for additional oil unless you'd like to add it. Place an egg (or two) on top of the cabbage and cover. Cook on medium-low heat until the egg whites are no longer transparent. The egg will poach as the cabbage heats up. Sprinkle with a bit of salt and pepper and enjoy!
