Cashew Nut Butter
This is great for thickening cream soups and curries.
For a large amount of cashew butter, place the organic raw cashews into a food processor with the blade inserted. If you're only making a small portion of nut butter use a nut grinder or a converted coffee bean grinder. Run the processor stopping occasionally to scrape down the sides. It takes a while to grind the cashews into butter, approximately 10 minutes. It's interesting though to watch the process as the nuts go from ground to paste. I keep the nut butter refrigerated for longevity, but it does get hard. Before using, you may want to let it set at room temperature for a bit. Use within a few days. |
