Kale Salad
The secret to great tasting kale is to strip it off the rib, place the kale into a lettuce spinner, fill with water and massage the kale as you're washing it. Spin to dry and chop the kale into small pieces. See my easy instructions on how to prepare kale here.
Salad a bunch of kale, washed, massaged, chopped 1/4 cup pumpkin seeds 1/4 cup sunflower seeds 3 carrots, diced 1/4 red onion, diced 5 medjool dates, diced 1/4 cup pecans, chopped 1 cup cooked lentils 1 cup cooked wheat berry or quinoa |
Place all the ingredients into a bowl, adding more of what you like and less (or omitting) what you don't!
Dressing
extra virgin olive oil
lemon
apple cider vinegar
cumin or garam masala
dry mustard (helps the oil and vinegar bind)
salt
pepper
It's hard for me to give you exact measurements for this dressing because I generally just put them into a jar and hope for the best. It always comes out great!
Combine the dressing ingredients to taste, or add your own favorites. Garlic is always a good addition.
