Almond Butter

16 oz Roasted Unsalted Almonds, preferably organic
sea salt

Place the almonds into a food processor with the blade inserted. Run the processor stopping occasionally to scrape down the sides. Depending on your food processor's motor, it can take a while to process the almonds into butter, approximately 10 minutes. A higher horsepower motor can take only a few minutes.

Mix in a bit of salt if you prefer a salted nut butter. Using unsalted almonds allows you to use your own high quality salt.

Store the almond butter in a glass container in the refrigerator.

Homemade Almond Butter: the process
NOTE: If the almonds are still crumbly after processing them for 8-10 minutes, that may be do to the almonds not being fresh and the oils have gone by. If the almonds taste okay (i.e., not rancid), then add some olive oil.
