Quinoa Fish Bowl
This tasty fish bowl is a variation of a fish taco recipe I like to make from Natasha's Kitchen*. Instead of tortillas, I use quinoa for the bottom layer and add my ingredients on top. I keep the fish fillet in one piece instead of breaking it up and I top it with the remaining ingredients. The sauce for this dish is spicy, cool and a perfect complement to the spicy fish.
Makes 2 dinner sized portions. 2 fish cod or haddock fillets, cooked
