This is a great way to get a serving of nutrient dense carbohydrates for breakfast. As an added advantage, the eggs are poached right on top of the spinach - it couldn't be easier!
1 tablespoon coconut oil 2 handfuls of baby spinach spread out in the pan 2 organic large eggs 1 pinch sea salt / pepper
Heat coconut oil in a saute pan over medium heat. Add the spinach. Try to make small indentations in the spinach and then gently crack the eggs on top. Sprinkle with salt, pepper. Cover and allow to cook until eggs are done to your liking. The spinach will wilt perfectly!
OPTION: Instead of using coconut oil, put a small amount of water in the bottom of the pan. Heat the water, add the spinach and egg. Cook until the egg is to your liking and drizzle olive oil over the eggs.
