Avocado Egg Salad
This recipe uses avocado instead of mayonnaise in egg salad. There's nothing wrong with mayonnaise as long as it's real and you're able to keep the egg salad cool until you eat it. However, I found using a mashed up avocado with the hard boiled egg is a good substitute giving a nice amount of moisture to the salad. I add a little salt and pepper and enjoy the egg salad on some nice leafy greens with sunflower seeds sprinkled on top.
